I understand the first Brookhaven Farmers' Market will be held in Railroad Park Friday morning from 7:00 a.m. to 1:00 p.m. and repeated every Friday through the summer. I can't wait to find what great fresh home-grown produce will be available. And after you shop, be sure to walk over to the library to find some wonderful recipes from our extensive collection of cookbooks.
Just to get you thinking, we got some fresh tomatoes yesterday. We chopped up several seeded tomatoes, added lots of fresh chopped basil and chives (from the back yard) and tossed them with olive oil and balsamic vinegar, salt and pepper. Then we served it over whole wheat angel hair pasta topped with pine nuts and freshly grated Parmesan. In less than ten minutes we had a world-class feast that even our teen-ager enjoyed.
So, don't miss the farmers' market and be sure to visit the library for some great cookbooks!
